Career Day at Granger Middle School District 204

I am about to depart for my career day talk at Granger Middle School. I will be their keynote speaker. This is a first for me, keynote speaker. This is the fifth or sixth time that I have been invited to their career day. This school always impresses me with the way that these middle schoolers handle themselves and run their career day. The students are there to meet and greet their guests with different careers. I will be discussing chocolate and the different types of, during my time in the classroom. I will post later. What does our future hold at the restaurant

Thinking about on going negociations to maybe relocate our restaurant. If we do leave our place, it will be very sad. We were always like the little engine that could. We have accomplished so many great things at the restaurant. I mean, we are located next to a Ponderosa Steak house in a strip mall in Aurora, IL. I believe that we should always make do with what we have and make the best of any situation that we are in. About 7 years ago, we took over an abandoned Pizza to go restaurant and converted it into a small upscale restaurant. We remodeled the restaurant almost two years ago. From the outside, our place doesn't look like much. The inside of the restaurant is very homey and welcoming. We have been very blessed to have been able to have the opportunity to even have a restaurant and make some great friends. I have no problem staying where we are at. We need to grow and move on but not at the expense of paying to much and not making it. The memories of trying to get the place open on time and dealing with contractors and city inspectors. The memories of my dad, kids, wife and teenage employees, that are now adults, working together to build, paint and decorate the restaurant. Yes, I have been so preoccupied with many issues, but it's all good. I look forward to even greater things no matter where I end up.

Insomnia over new and exciting future for Chef Amaury

I can't seem to sleep. Just thinking about my menu for the weekend and how to make our restaurant the best. Thinking about publicist that are much needed but economically out of my reach. Thinking about creating items for my menu that will be memorable. Thinking about our future and where we will be in short few months. I have nothing to complain about for I am blessed in doing something that I truly love. I have the priveledge of creating and cooking food for people that enjoy cooking and eating. People of different backgrounds join together at my restaurant to share in my passion for food. Yes, I consider myself very lucky and privileged. This blog will be dedicated to just discussing the creation of food, inspirations, and the restaurant business. I just need a forum to discuss what's on my mind. Maybe, I can bounce ideas to other readers. Maybe, this will be a way to reach to other foodies or restaurant people. There are so many things to ponder in this business. I look forward to many more posts in the future.
